SAFFRON is the pistil of the Crocus sativus. Cultivated in Persia for over 3,500 years for its vibrant color and leathery, herbaceous fragrance, saffron has spread throughout the Mediterranean and traveled to the courts of Europe, China, and the Indian subcontinent, where it has always held a very strong symbolic value. Likened to gold and eternal life by the Greeks, and to the flame of knowledge by Hindus and Buddhists, this "red gold" gives Safran its firm character and a supple and elegant leathery facet.
